I just bought an apple watch series 3 and the apple store told me that my iphone 6 was compatible with this watch. But every time I go to set it up, my phone says I need a new update when i’m on the latest ios. Can anyone explain how I can set this up?

The watch probably came preloaded with Watch OS 6 (or later updates). If so, you cannot pair it with an iPhone 6. You would need an iPhone 6S or newer. If you purchased the watch within the past 14 days, return it for a refund. Bring proof of purchase with you.

You can't. Unless you have an iPhone 6s or newer, go back to the Apple Store and return the watch.
