If I back up my phone I need to make sure I Don’t share my photos with the family.

how can I know I’m not sharing with family members

When you are sharing iCloud storage under Family Sharing, each members iCloud storage is separate because it is tied to their Apple ID. For a Family member to access what you have stored in iCloud, they would need to log in using your ID.
