why is it that I deleted and cleaned up my emails but on my iPhone all the emails still show up?

One likely reason is you set up gmail that way ... assuming you're using the iPhone's Mail app.
Check Settings > Passwords & Accounts > Gmail > Account > Advanced
What choice did you make under "Move Discarded Messages Into"?
