Notes text color changed going to 26.1

Notes question:

Why oh why does apple have to mess everything up when a version of the os comes out? The Notes app was working just fine as it was and now I'm wasting a lot of time trying to figure out how to fix this. For whatever reason the color of the of a new note title is coming up yellow along with the cursor. Why does anyone thing yellow on a white background is good? Text in some of my old notes comes up yellow for who knows what reason. The selected note group title you're working within is yellow. Can someone please tell me how to get the Notes app to just work in BLACK unless I explicitly want to change it. I've googles online and notes help for how to fix this with little success.

This event happened when I went from whatever version I had to 26.1. I'm on a 2021 mackbook pro.
