iPhone not displaying Apple Watch Device Name when pairing Watch manually

I’m trying to pair a new Apple Watch 11 with my iPhone 14 Pro running IOS18.2. I’m unable to pair the watch automatically (by using iPhone camera to scan watch) because it wants me to update my phone to new IOS26 but I don’t want update as I know it will slow down my phone. So I’m trying to pair manually. When pairing manually, I click “Pair Apple Watch Manually” on the phone, and next page says “Tap the “i” icon on your Apple Watch to view its name, then tap the corresponding name in the list below:” My Apple Watch displays the device name (Apple Watch 678653), but the Apple Watch device name doesn’t not come up on my phone. I just says “Devices:” but nothing below is listed. I’ve reset both devices (iPhone and watch), Reset Network Settings on my iPhone, and deleted and reinstalled Watch app and still nothing.
