"Turn off word wrap"...? as in, when the text gets to the edge of the page, keep going?
I can't imagine a use case for that...
Either way, Pages operates in one of two modes. There's 'Word Processor' mode, which is the default, and runs like one continuous stream of text from the top down.
The second way is 'Page Layout' mode, where you manually position text boxes on the page to contain text.
From your description it sounds like you want Page Layout mode, since that will prevent a continuous stream of pages, but it's unclear what you want/expect to happen when your text exceeds the width of the box.
The type of document you're using is based on the Template you selected when you started (things like Books, Reports, and Letters are 'Word Processing'-based, while 'Flyers, Newsletters, and Cards' are Page Layout based.
If you've already started your document, you can switch the document type via the File menu:
