How to remove iPad as a speaker option when in call on my 14 Pro
when I make a call, it gives me the option to use my daughter‘s iPad. She has her own telephone number email and Apple account.

Turn off Calls on other devices.
Settings > Apps > Phone > Calls on other Devices - turn it off
Are you and your daughter sharing the same Apple Account? You shouldn't be if you are. Each family member should have their own unique Apple Account. If you do, did you know your daughter can see your text messages, your call history, your photos, etc., and she can delete things which you might not want her to delete. She could do even worse, like change your Apple Account and lock you out of your accounts completely.
