Apple Mail: Change 'From' field to match current mailbox

In Apple Mail, is there a way to change settings so when I compose an email, the From field is automatically the same as the account mailbox I'm in, instead of the default account?

I have several different accounts, some work and some play, and on occasion when I'm in one account inbox checking emails, I'll compose an email and sometimes forget to check the "from" field to change it to the mailbox I'm in. Which sometimes leads to apologies and awkwardness.

I'm using Sequoia on my desktop and Tahoe on my laptop, and looking for a solution for both. (Tahoe has some features I'm not a fan of, and so I'm waiting to update my desktop).
