Erasing data off old phone

I had an old iPhone 7 signed into my icloud account but I don't want it on the account anymore and am passing it on to my son.It has no network or SIM. So I removed it from my account but didn't dare erase it. My question is, can I manually delete apps and data from the phone without it affecting my iCloud or erasing any of the data on my personal iphone?
