After I updated to mac os Tahoe V 26.1 when I start my computer I have to log into a Tahoe screen and then the computer reloads my normal sign in screen so now I have to log in twice how do I get it back so I only log in once

In your case, I would expect to see:
FileVault is Off.
FileVault master keychain appears to be installed.
Encryption in progress: Percent completed = XX
The encryption progress may or may not be there (likely not with Apple Silicon or T2 chip), but it should state that it is Off or On. So, it appears something is confused.
Try disabling it with fdesetup:
sudo fdesetup disable
I have disabled the FileVault system but I have the same problem
What is the result if you copy/paste this command into Terminal. It checks the FileVault status. Perhaps it will show something different from System Settings.

I don't know why that would be the case. The only reason one would have to log in twice is once for Filevault, and the regular log in. I don't have to log in at all since my Macs are set to log in automatically.
