I have an iMac 27″ (purchased July 2016, Serial: C**********) that I'm looking to recycle responsibly
I want to make sure I'm managing e-waste properly. Does anyone know if Apple still accepts this model for recycling or trade-in? Any guidance would be appreciated.

Yes you can recycle it responsibly using one of Apple free recycling programs. To locate the recycling program that services your part of the world (we have no idea where you are) just click the following link to get started.
It's too old to have any trade in value but you can have it recycled by Apple.
If you do not have an Apple Retails store near, several office "superstore" chains offer tech recycling at not cost. As a Staples store is only 7 minutes from my house, I use them.

I recently dropped off POUNDS of old tech gear with no issues.
depending on the country you live in, where I live I can just drop it off at the local recycling center along with every other piece of electronic and they process it.
When you take it into Apple for recycling you'll need to sign a transfer of ownership of some kind.
Just to add, there was no 2016 iMac. It's probably a 2015.
FWIW, I checked the serial number before it was removed, it's definitely a Late 2015 iMac.
