I'm trying to install windows 10 on an imac 27 2017 (7600k,32gb ram,radeon 580) but I keep getting: SYSTEM_SERVICE_EXCEPTION (0x3B)

Sounds like a system file or internal component gone wonky.
A word of caution: "Vanilla" Win10 is no longer supported. You must be running build 22H2 to get updates through next October.
First, let's rule out a fault with the hardware. Assuming you're running Ventura on the Mac side, reboot and hold the D key to start diagnostics. This might take a while, but check the code at the end against this list from Apple:Apple Diagnostics reference codes - Apple Support. Anything other than "ADP000", there's a problem of some sort. And unless you're in an area with "right-to-repair", you could be out of luck. California also does not allow certain forms of obsolescence, if I'm not mistaken.
If Diagnostics came up clean, then the next thing to check is macOS itself. Get to Ventura if not already there. Your system's firmware will be upgraded as part of the process.
If you have a copy of Windows 10 22H2, then start Recovery (How to start up from macOS Recovery - Apple Support). Set up the boot security to Medium and then try booting from the USB stick with Win10 on it. Use it to overwrite the corrupted copy.
If you must install Win10 by hand, then once you have a fresh copy of Win10 running, get back to Mac and launch Boot Camp. In the menus up top, you'll find an option to download the Boot Camp software for your Mac. Do so onto an empty USB stick.
Back in Win10, use the USB stick you made to install Boot Camp utilities. Restart when prompted. You can now use the Option key to select an OS. Go to Windows.
In Windows, run Apple Software Update to pull down the latest AMD software and anything else your Mac needs. Do this until you see that your software isn up to date. Then, run Windows Update and register for the 1-year extension. Keep running Windows Update, rebooting as needed, until you get the all-clear.
Last but not least, go to the Microsoft Store and get app updates until all-clear.
