Synching Photo albums using iTunes to iPhone

I have all my photos on my PC computer arranged in albums. iTunes has a feature to synch the albums you choose to iPhone. Worked perfectly until and update in last few years and then it only synchs some photos. Got a new iPhone recently and it stripped a good part of the photos out of the albums (under from my MAC -I have a PC) and spread them across my photo stream. Some albums it left only 5 photos and some 30. I want to have a photo stream of iPhone photos and Albums I choose in iTunes- I don't care if they are labeled "from my Mac" I just want them there and available and easy to find, not lost in my photo stream. A lot of organizational work went down the drain, and now I can't show anybody my artwork or family photos without a lot of searching and not a good look in social situations.

"From My Mac" is a place for pictures that are transferred temporarily from a computer. Pictures that are transferred this way can be shown by Photos, but they're not "owned" by Photos. So these pictures can't be edited or deleted by Photos, and they can't be synchronized by iCloud Photos. The idea is that they remain on the computer.

Of course, most of us here don't regularly use PCs, so it's hard to keep up. Are the pictures that are now outside of "From My Mac" editable and deletable? That's an important change, if so. What happens if you try to go into Edit Mode with these and with the "From My Mac" pictures?
