Universal Control switch mouse/keyboard to ipad without using push through edge?

I'm trying to use the mac's keyboard and mouse on a connected ipad. I can use push through edge fine, but I want to be able to do it without pushing through edge but can't work out how to.

The articale at Universal Control: Use a single keyboard and mouse between your Mac and iPad – Apple Support (AU) says "you can still connect by clicking Display in Control Centre, then choosing your Mac or iPad from the menu." but that only seems to allow "mirror or extend to". (and by the way, it's the mirror button I think they mean not the word "display" which does different things with the existing connected displays)

So, is there a way to connect the mac's keyboard and mouse to the ipad, keeping the ipad in ipados mode (not as a mac display) but without using the feature of pushing through the screen edge?
