Windows 11, Apple Devices app won't see music on my Iphone SE 2020; just spins and spins

Can't manage music on my SE 2020 via the Apple Devices app for Windows 11. App sees my phone, but not the music on it.

Up until recently, I have always used the iTunes app on my PC to organize the music on my Apple devices (phones, ipads, ipods); iTunes was a workable interface for me to create playlists, rip songs from CDs I actually own, and add/delete songs on my devices. However, recently iTunes quit recognizing my devices phone when I'd plug them in to my laptop (SE 2020s). After researching, it appears that Apple no longer wants users to use iTunes and instead is pushing folks to the Apple Devices app on Windows to manage content on their devices and to the Apple Music app to manage their music. Super klunky, but whatevs, I'll try to make it work. But that's the problem, it isn't working. The Apple Devices app sees my SE 2020 when I plug it in; the "General" heading under the "Settings" area accurately reads my model number, phone name, used storage, etc., but all of the "On My Device" headings just spin constantly when I click on them and show absolutely zero info. Ironically, the app does read 2 of the playlists that exist on my phone (Lake, Mountain Mix), but aside from that I have zero visibility into the music on my phone and I have no ability to modify or add audio files to my phone now. Is there any way to fix this? I wish Apple had just left iTunes alone; it wasn't a perfect GUI, but it worked. This is just ridiculous and feels like Apple is trying hard to prevent folks from accessing their own non-Apple music on their own devices.

I'm having the same issue with an Ipod Touch 5th Gen. After Itunes stopped permitting music transfers to the Ipod I downloaded the Apple Devices and Apple Music apps. Now I can't see music on the Ipod when the Ipod is connected to Windows 11 with Apple Devices and Apple Music apps running. Also, when I try to add, say, a single album to the Ipod, it erases all the existing music previously transferred and only the newly added music is now on the Ipod.
