There are two issues you might run into:

Make sure to allow it in the privacy settings.

You might need to change the Mic Mode:

Use Voice Isolation, Wide Spectrum, or Automatic Mic Mode on your iPhone and iPad - Apple Support

We don't know whether you are recording using your voice, or using an external microphone, or ?
