I checked where you said under Display and Brightness/shut down and it’s set for 2 minutes (greyed out). It is turned off and if I turn it on, the 2 is still grey and I am unable to change it to make it longer.

Be aware that your iPad auto-lock will be fixed at two minutes if you have enabled Low Power mode:
Settings > Battery > Low Power Mode
