Have you been through this link to see how to use multiple Windows on iPad in iOS 26 --> Work with multiple windows at once on iPad - Apple Support

If you're having an issue with Microsoft Excel, that's not an Apple product, so you should reach out to Microsoft for help with their app. Apple has absolutely NO control over apps they don't own.

iPadOS multitasking has received a significant makeover from that to which you may be accustomed in iPadOS 18.x and earlier - and may take a little time to learn and adjust your workflows. You would be well advised to review the official iPadOS User Guide and the many available online tutorials (such as YouTube) to become better acquainted with the new multitasking interface and associated gestures and controls.

While the previous Slide Over view has been retired, Split View remains - although it is accessed differently. You can have two or three App windows side-by-side - or a spit the screen into four quadrants.

To access, assuming that the current App window is not maximised; touch-and-hold the traffic-light icon at top-left of the App window to expose the Fill & Arrange options:

The current App window will move aside, allowing you to open another App; the selected view will open the selected Apps in their own windows - which can be resized laterally, as before, by dragging the divider to left or right.

If the App window is already maximised, swipe downwards from the top-edge of the screen to expose the new menu bar - then use the traffic-light icon as described above.

With a refresh, you can expect to see significant change - this often being an unavoidable consequence of introducing new functionality. While iOS/iPadOS may initially have a learning curve, the new controls when practiced will soon become second nature.

As for the adage "if it ain't broke, don't fix it", perhaps consider that change is often necessary to remain relevant. An unchanging product will become stale - and when compared with competitors offerings with more functionality, will rapidly lose market share.

Change is inevitable. While we humans are pre-programmed to resist change to established habits, we have to adapt to the changing environment. Another phrase often heard is "evolve or die". Technology often mirrors biology. 🙂

Your undefined issue with Excel might be best directed to Microsoft's own technical resources.

I am having the same issue, and since I tried ti use Excel with the new update my Ipad has been crashing repeatedly and rebooting after a pink screen shows up, I called Apple Support and they told me about some compass and balance issues. BS in my opinion, this is clearly a problem with IpadOS 26.0.1, I have this Ipad since last year May and never had problems till now
