Mac Pro 7,1 Startup Security Utility does not allow to set to "No security"

Mac Pro 7,1 running Tahoe 26.0.1, I enter Recovery, run the SSU utility, set the selectors on "No security" and allow boot from external drives, then close it, reboot ok into Tahoe. Then reboot into recovery again, run the utility again and surprise, It still allows to boot from external drives but security has changed to Medium Security. Filevault is disabled and not in the process of decrypting the drive. And an administrator account is correctly provided twice.


Why?


I want to boot from an external drive (which oh surprise includes internal PCI-E nVME adapters) an old OS with no security and the thing keeps telling me I may need to reinstall it. No I may not.

Update:


After all this tests I entered in recovery once again and disabled external boot and set security to High... It asked me which drive was going to boot to check the signature with Apple an so I thought it did. But now after searching online for help I went into recovery once again and surprise: Medium security and boot from external drives were enabled. Stuck there?
