So since i upgraded to Tahoe, i have been enjoying customizing my folders with tags and icons and emojis. All good there.. However, when i place said customized folders in the dock, they just show as regular default folders.
Is this a bug ? There has to be some way, as folders such as the tools folder found in apps does show its tools icon.

As a temporary workaround until they sort this out:
Modify your folder as you see fit with color or iconography.
CMD + I (Get Info)
Click on the folder icon at the top to select it
CMD + C (This copies the modified folder look as image data)
Click on anything else to deselect the folder icon
Click back on the folder icon to select it
CMD + V (This pastes the image data back onto the folder)
Folder in the dock will update instantly
Caveats: You will have to redo this to modify the folder again
To clear it back (to whatever modifications you had done in Finder), select the icon again and hit delete

FWIW, you would have to change the icon of a folder to customize a folder and have it show in the Dock. If you use the "Customize Folder" option it will not show in the Dock, but does show in the Finder.
This hack works because programmatically, the dock is designed to support replacement icon IMAGES put in place by the user. It apparently is NOT designed to support programmatically assigned (User requested but not actual user pixel data) folder icon changes. I look at this as a huge mistake that should be corrected. frankly, it was the only reason I upgraded to Tahoe and it doesn't even work
Thank you, this is the "old" way of customizing folders, but i'm surprised that what you described here works. It is kind of stupid that this way of changing folders work in the dock, but not the new shiny built-in folder customization method, haha. Will have to do this for the time being, thanks.
AFAICT, user customization of folders do not show in the Dock.
