Apple wallet credit card detail information

The option to display my card detail information will only show me the last 4-digits of the credit card and the last 4-digits of the Apple Pay

That is correct. Your entire credit card account number is not stored on your device. The last 4 digits for Apple Pay are only used for refunds where the merchant uses that for verification. That number is provided by your bank when the card is added and stored in the Secure Enclave on your device. The entire number is not viewable and never needed by you.

Card Details reveal:

Apple may use the last four digits of your physical card to help you identify transactions. Your full card number, expiration date, and security code are encrypted and stored in your iCloud Keychain. They are visible only to you and are not used for Apple Pay transactions.

Prior to the last update, that option was available and it displayed the 16-digit account, person’s name, expiration date and the CVV code. After selecting a card in my iPhone ‘Wallet App’ and selecting the ‘3 dots’ in the right corner, three (3) options are available: 1 - Card Number, 2 - Card Details, and 3 - Notifications. Option two (2) no longer displays the complete card information, it displays a page that allows you to login to the credit card company.

I made a purchase at a store did not support Apple Pay so I used the 3-dots to display my credit card details so they could manually enter my info and voila no info. How do I retrieve my CC info from the Secure Enclave on my iPhone?
