How to access stylistic alternatives for fonts in macOS 26 Pages and Keynote?

Prior to Mac OS26, when working in Pages or Keynote, I could select stylistic alternatives by doing the following: Format > Font > Show Fonts


Then in the font panel selecting the 3 dots: Typography > Stylistic Sets


This would often provide alternative characters for different letters. I could then apply them throughout my document.


I can no longer figure out how to do this in Mac OS26 as there are no additional menu options in the font panel. Does anyone know how to do this? Selecting the alternate character in the "character viewer" panel is no an option as it does not allow you to change the character across the entire document.
