I cannot see what "Documents" Are taking up so much room on my MacBook

From that, we can get a little more detail about what is installed and what is running here.

Does tapping on the circled ℹ️ control next to the Documents line provide anything relevant?

PS: It says I have Books- I don't. A lot of what it is saying I have I do not- I practically stripped my computer of data, I thought.

At 544MB, that is probably just the App, no data. Apple does not allow removing some of its built-in apps. See the section, "If you can't delete the app" in this Apple article, which specifically mentions Books:
