How to get my documents from iCloud to Mac

You mean the iCloud Drive folder, is that right? The iCloud Drive folder is just a folder on your Mac. If you don't want your files in the Documents folder there, then just grab them and drag them to another folder that's not in the iCloud Drive folder. As with any folders on a Mac, dragging from one to another is a "move," not a "copy."

Documents and Desktop are special kinds of folders in that many apps assume that they will be in the User folder. So you can't drag those folders out of iCloud Drive, but you can drag their contents. If you don't want Documents and Desktop to be in the iCloud Drive folder, then after transferring their contents to other folders, you have to turn them off in System Settings. That will put empty Desktop and Documents folders back in your User folder, and you can fill those from the folders you dragged stuff earlier.
