I’ve just arranged Apple One Family.
My wife has previously set-up Apple Music (family) and a payment is due to be taken in a couple of weeks. Should she cancel her subscription? And will her music be retained and seamlessly transferred under Apple One? Do I need to do anything?

Subscriptions are always charged to the organizer, so you getting Apple One or her getting Apple One will end up being charged to whoever is the organizer regardless.
With that said, Once Apple One is shared , it should seamlessly transfer over all other members of the family group and automatically cancel any active subscriptions for services included with Apple One on other family member's accounts.
Do not manually cancel it as that can lead to loss of music and playlists.
