With the last update -MacOs Thaoe-, the preview app's selection bar color become much more darker than the previous version. I couldnt see sometimes when the environment is not capable to lightening. So, how can i change back the color of the phrase or sentence selection part?

They are, and it's specific to PDFs so it does seem to be a bug.
Left side is a PNG screenshot, right side is that screenshot exported from Preview as a PDF.
In System Settings > Appearance, I changed the highlight text color to a lighter color, Ice (using Choose Color > Crayon palette). That helps.

For what it's worth, the highlight colors are darker in Preview on Tahoe than they were in Sequoia. Nothing you can do other than send Apple feedback.
The setting for text selection highlighting is found in System Settings > Appearance.

Not sure exactly what is your "Preview app's selection bar"...
If this is the menu bar you can try changing the transparency and compare your results, there are several options,
