I can sign in with my iCloud and Apple ID but the notes, calendar, photos etc, aren't syncing. I checked my iCloud on browser and its all there, simply not syncing on my new MacBook Air

Signing in isn't enough, because "iCloud" isn't really a thing-- there's iCloud Photos, iCloud Drive, iCloud backup, etc, and these are all separate services. So you need to decide, as sberman implies, just which of those things you want to use. Using more services requires more storage (and so may cost more,) so it's best to think through it carefully before turning things on.
