Apple Intelligence on Apple 14 Pro Max
Does Apple provide an AI on the Apple 14 Pro Max? I read that the AI intelligence is only offered on Apple 15 and newer models.

Apple Intelligence will not run on your iPhone 14 Pro Max. Apple Intelligence uses on-device processing for security and protection of your personal data, and the hardware on the phone is not capable of effectively running it. There are other third party AI providers where your phone is a client and the processing is done on their own servers. This does not need the hardware on your phone and you can use those services if you wish.
As for the security/privacy aspect of those third party services, I would not be giving them any personal information. They are building a profile on you, similar to what Facebook does or frankly any Social Media app. You are trusting them with any data you give them, and that is not always a wise move. Google concerns me the most with Gemini, as they require you to create an account with them, and if you are also using that account for Google searches or combined with other Google apps, you can bet they are sharing that data as well.

No; they don't have enough RAM. It's not available on the regular iPhone 15 either.
