In a couple of months we're moving to a different hosting service, I will archive all of our emails on my laptop and setup the same email accounts on the new server. Just in case, I would like to backup the archive emails if we have to restore them manually for the new accounts. Where are the archive folders located at?

Archived emails are all the emails that you have received and that have not gone to Junk or Trash, either by rules or by yourself.
If you are moving to a new host, they will probably get you to create a new email address, which you will have to import your existing emails from your old host before closing the account. You should phone or email the new host and ask if they are going to make you create a new email address and if so then get instruction on how to import your exsisting email on the old host.
