iOS 26 update taking over 2 hours on new iPhone 15

I just got an iphone 15 and am trying to upload my old phone to it and it needs to be updated to ios 26 first but the update is taking over 2 hours on the new phone

How do we know it ever will complete? At this part - the Install - I don't even have a progress bar, just one of those good ol' circles of death. How can one tell if it's actually doing anything or just stuck and never going to get anywhere??
