I’ve ordered Mac Air 15” last Thursday and the expected delivery will be today but I’ve been waiting all day already and still stuck with preparing to ship. Is this normal? Or should I just pick one in an Apple store instead?

A computer needs to be manufactured regardless what you added to it. Apple does not maintain warehouses full of computers ready to ship. An order is received then the computer is manufactured. You should have been notified of an expected delivery date.
I’ve been contacting Apple until now it’s still preparing to ship. It was supposed to be delivered yesterday but until it’s still preparing. Yeah it’s frightening cause it was paid in full

The computer status will change to sent to shipping after the computer comes off the assembly line.

Your payment does not process until the order is sent to shipping.
