I have updated to iOS 18.7 and now trying to update to iOS 26, but iTunes not showing the update
and using OTA it takes more than 4 days to download the update

I had the same issue, however there is a work around, or at least this is how I did it. If you connect the iPad to iTunes then put the iPad into recovery mode (hold down the power and the home button till it shows recovery on the iPad) it then asks you in iTunes if you want to recover or update. Click on update and it gives you the option for iOS26. This then downloads the update to iTunes and updates the iPad.

I am having the same issue with my IPad 8th Gen. It has not got enough memory available for the update, so trying on ITunes but get the same result as you, saying latest software is up to date.
It did this on iOS 17 when 18 came out, and 16 when 17 came out. It's a repeating bug that Apple has not fixed.
