Can't delete Apple Watch as Source from the Health app - I want my fitness rings back

Recently my Apple Watch 2 broke, and I deleted it from my list of Apple devices following this link: Apple Watch entkoppeln und löschen - Apple Support (DE). The day it broke, the fitness app stopped recording all activity, even if I was using my iPhone 11 Pro Max.

The Fitness app used to record the outer red ring before someone gifted me the Apple Watch 2.

I've googled and found this community post: Can’t Delete Apple Watch from Health App … - Apple Community. However, although I can move the Apple Watch below the iPhone as a source for the Health App information, I cannot uncheck it. My watch is no longer listed in my account as a device. Since the screen is black and cracked and can only charge just a little, I cannot pair it again with my iPhone.

After deleting the watch, I restarted my phone.

I enjoy the Fitness app and really want to use it. So how do I get that Apple Watch unchecked? I can move it up and down, side to side, but I cannot uncheck it.

Thanks.
