How do I update the browser with a Catalina version of Apple laptop?

Safari is baked into the macOS ie there is no stand alone app— however as noted third party browsers like Firefox update all the time to stay current.

If your Mac cannot go higher than Catalina, then it's at least 12 years old and you really should be considering a replacement.

If Catalina is as high as you can go, you cannot update Safari further than macOS will allow. However, you may be able to use another browser such as Firefox, Brave or Opera.

I believe that Brave now requires Monterey or later, while Opera requires Big Sur or later.

The current version of Firefox will still run on Catalina.
