Been struggling a bit with moving videos from my GoPro to my Mac. Tried a few methods but nothing feels quick or easy enough, especially after a long day of filming. I just want something that keeps the quality.

I agree with woodmeister50. Take the SD card out of the GoPro and load it to your Mac. You may need an SD card reader. They're cheap.
Which methods have you tried?
Did they not work or just work poorly?
Have you tried a simple inexpensive SD/Micro SD card reader?
