If you look at the carrier availability page Apple Watch - Carriers - Apple you will see there is only one worldwide model (A3281) for all regions except mainland China. Here in UK we have 5G support listed but for AU or NZ it only mentions 4G. That suggests it is either lack of (declared) support from your phone network or maybe an oversight on the web pages. One day after the product announcement it could even be as simple as pages not yet updated.

Bottom line, ask your preferred cellular network to confirm if they support the new Ultra.

Branta_UK thanks for the reply and I was aware that the model is worldwide which is what is confusing. As tech specs are a capability not whether you can use it, so if it is a capability (as it should be given if all hardware/software is the same against the worldwide model) it should still be listed on the tech spec and then as is done on the other pages around the world have a footnote describing it is up to the carrier.

I hope it is as you suggest in that they just have not updated the page yet and it is not some compatibility issue between the hardware and the carriers.

I did some more research and flagged the issue to our Apple Support Community managers in the hope they can raise it up the line. It seems strange that Australian iPhone is listed as supporting 5G on all the same expected bands as everywhere else. I think the cellular service in Australia is compatible and there is a high probability it will be a copy-paste oversight on the web pages.

The best advice I can give is to wait until the real hardware hits retail stores in a week or two, then check again and if it is not resolved ask questions direct to Apple employees in Australia.

Unfortunately we don’t know yet whether you will get any kind of indicator on the watch display to say which cellular service it is using.
