The sensors are color, so the original picture will always be color. But you can make it monochrome and adjust the contrast and brightness in the Edit Mode.

After you take the picture, go Edit

And in Adjust find the Saturation control. This makes the colors brighter or paler.

You can set Saturation to -100 and get a black and white image

And adjust Contrast, Brightness, Blackpoint, etc, to add nuance

It works pretty well!

Steps to take a new black and white photo:

Open the Camera app on your iPhone. 

Tap the arrow icon at the top of the screen or swipe up on the live view. 

Tap the three-rings icon to open the Filters menu. 

Select a black and white filter:

• Mono: A neutral black and white with even gray tones. 
• Silvertone: Adds a cooler, slightly silvery tint with more contrast. 
• Noir: Creates a high-contrast, moody image with deep blacks. 

Frame your subject and tap the shutter button to take the photo.
