Siri saying I have been hacked
When I say hi to Siri, it replies with “Hacked, You have been hacked, Please delete all personal data”
Why is it saying this?

I suspect you have a Shortcut that activates when you say Hi and produces that message. You see these on many Social Media sites and you use them to say anything you want with any activation word. Go to the Shortcuts app and choose My Shortcuts to find the shortcut added to your device. You may have inadvertently added it from a link or someone could have Airdropped it to you.
Shortcuts are also synced, which explains why you see the same thing on both of your devices. Here is one I created that says "Not Hacked" when I say "Hello".

I don't see anything in your screenshot where you are using Siri at all. You may have confused Text to Speech as being Siri and whatever service you are using is simply being read back to you. Either let us know what service you are using or provide an entire screenshot instead of just the text snippet of an unknown source.
Which app are you using when you say “hi” to Siri?
Or are you using voice commands for accessing Siri?
Also, while it does have Siri access, iPad Air 3rd gen doesn’t have access to Apple Intelligence.
When I asked Siri I was on the OneDrive app. It was Siri, not Apple intelligence. I activated Siri via the home button. When I first said something, it accidentally picked it up as hi. I thought this response was strange so I asked Siri again and got the same response.

They do exist, you know. There are dozens of them!
Jk, jk. I have a hard time passing on an Arrested Development ref.
It would be funny if we named them all after mythological creatures, though.
I actually do have a real question.
Before I read the responses, I’d just assumed OP switched devices to post and didn’t update default selections. Now I’m wondering if there’s another forum feature I’ve overlooked. (You keyed me in on one awhile back, so thought I’d ask.) Having access to a reliable dataset of hardware models and software versions would def be conducive to troubleshooting.

For folks answering questions: MacTracker app is available (free) in the App Stores.
For folks asking questions, information provided can be all over. Printer and router questions can lack model info, for instance .
As for the posting, I’d wonder if it’s some sort of a joke. The appearance of the text doesn’t match what I get with Siri here.

That was it. I was being stupid. It was a shortcut that I didn’t realise I had. Thank you so much.
That would quite possibly be a compromise, then.
Time to change your Apple Account password and device passcode, and the rest of your passwords, too.

Great deduction!
Whatever you're seeing is a scam. The poor grammar with a capital P following a comma is an instant giveaway.
You have been hacked, Please delete all sensitive data.
You also posted in the Apple Intelligence forum with a tagline of iPad Air 3, which I don't believe is something you have.
Whoops, I didn’t mean to put it in the Apple Intelligence forum. But it is indeed an iPad Air 3.
That is the full extent of the conversation.
I also get the same response on an iPhone 16 with Apple intelligence.
