I have changed my name from smith to Jones. I have followed all of the instructions MANY MANY times. Jones features on all of my information connected with Apple. Yet when I send an email, the ‘sender name’ is STILL Smith. I changed my name to Jones 4 years ago. I go round and round in circles but nowhere can I even find the name Smith in order to change it. It is jones everywhere! Please please help

Have you tried this? I logged into iCloud.com, went to Mail, and clicked on the gear icon in the upper left of the sidebar. From there, click on Accounts. At the far right of the Primary Email Address, you'll see three dots. Tap on those.
At the bottom of the box that comes up, you should be able to edit your name.
Where does it say "smith?" Is it your recipient who's seeing this? If so, is it everyone? I've used the same name since before email was common, so I have no personal experience. However, I think it's possible that how other people have you saved in their contacts may have an effect on this.

Though, the Real Name in Contacts application is picked up and used in Mail
What kind of email account is this? iCloud? Gmail? Something else?
I use Gmail. If I go to Settings>Apps>Mail>Accounts>Gmail>Account Settings>Name, I can edit what's there.

jane@icloud.com
I have done the equivalent of what you said, it’s Jones in everything. I can’t find ‘smith’ anywhere in order to change it.
