Apple Watch Ultra 2 losing notifications after CarPlay usage

I have a ultra 2 watch and a iPhone 16 pro max i Keep loosing notifications on my watch and have to reset it all the time it seems to be happening after I have been in my car and been connected to CarPlay

this is getting very frustrating I have just had my watch replaced a week ago and now I’m getting yet another issue on a £800 watch and a phone that cost over £1000

any ideas or is it time to ditch apple all together?
