I accidentally deleted a text thread that was over 30 days old. Is there a way to recover it? For whatever reason, iMessages were not backed up to iCloud on my phone.

You can recover any message that is still in recently deleted.

The 30 day time to recover from the Recently Deleted folder is when you deleted it, not how old the messages were. If you deleted it 30 days ago then it is no longer available.
