Illustrator and InDesign running slow

Hi guys, Illustrator and InDesign were very working slowly towards the end of last week. I shut the mac down over the weekend. I restarted it this morning and Illustrator and InDesign are running even slower. There's loads of memory, I've disabled some of the login items and extensions. I restarted in safe mode and I couldn't even start up Illustrator or InDesign. I've restarted again and both apps have launched but they are so slow. I'm using an iMac, the OS is Sequoia 15.6.1 Any suggestions to help?

Thanks den.thed. Here's my EtreCheck report. Any help will be much appreciated.

Not to take over the from very good work of my colleague @den.thed  + 1, but to work in collaboration with them

disk0 - APPLE HDD ST2000DM001 2.00 TB (Mechanical - 7200 RPM)

disk1 - APPLE SSD SM0128L 121.33 GB (Solid State - TRIM: Yes)

This makes this a Fusion Drive setup

Although the SSD portion of the Fusion Drive is of a good size

Nonetheless, even with the 7200 RPM Spinner / Mechanical Drive - this could slow down the Performance of the computer

Coupled with a highly Customized Software configuration,   as evidenced by “  System modifications - There are a large number of system modifications running in the background.”

Looking further at the report.

There appears to software has been migrated over several years dating back to in some cases to com.mcafee.virusscan.fmpd.plist (McAfee, Inc. - installed 2019-06-11)  and [Not Loaded] com.mcafee.ssm.ScanManager.plist (Not signed - installed 2014-10-07)

This could spell trouble
