Your iPad will suffer no harm whatsoever in being used while charging, or in being connected to external power for extended periods - whether in use or not. This usage model is common in Point of Sale and Kiosk applications. The iPad will optimally charge your iPad battery, modifying its charging strategy as appropriate.

If anything, it slows the loss of capacity of your battery because the iPad is being powered from your external power source rather that the battery. And setting an 80% charge limit is a good idea if usually using it plugged in.
