AppleCare subscription has renewed on my son’s laptop of which I am parent. Tho it doesn’t show up (cancel or purchase history) on either my Apple acc or his Apple account. How can I cancel it?

Apple Care subscriptions cannot be hidden. They are tied to an Apple Account that started them and must be managed from there.
If it's not on your account's subscriptions or your son's accounts subscriptions then it must be under some other account.
Where exactly are you seeing the renewal if it's not under either account?
