Apple Watch not charging past 80%, charging limit is disabled.

I've been having this issue with my series 10 apple watch since an update earlier this year. Not sure which update exactly, though.
The issue went away for about a month and now it's back.
Using the apple official charger. Watch was purchased at launch, it's currently barely a year old.
I wear my watch to bed, so I put it on the charger when I get home from work. Previously it would charge to 100% and I would put it on to sleep, waking up with somewhere around 90-80% to start my day with.
Suddenly my watch started capping my charging at 80% in the evening, showing the charging pause on the battery graph (shown below).
However, I do not have the optimize charging limit enabled that should be the toggle for this behavior.
Now there are days my watch dies because I am starting my day around 70-60% after wearing it all night.
