What device is this happening on?

This is the macOS Sonoma forum for computers, but your device line says you have an iPhone?

Depending on what device this is on, will be your options.

You cannot undo an update on an iPhone, once updated, it will remain updated.

If you mean a Mac, you can erase the Mac completely and install a previous version of macOS.

Also, if this is a Mac, tell which one and wether you have updated from Sonoma or to Sonoma. Post an Etrecheck Report and someone may be able to tell you why it's slow, it's unlikely it is the sole fault of an update.
