My experience is that Apple does not install a new battery in-store. They send the device to one of their central repair and refurbishment centers. For a quick turnaround, they send you a factory refurbished model of exactly the same specs as yours. Refurbished units get tested and fitted with a new battery and outer shell.

I set up the repair online, then dropped my iPad at an UPS retail Store near me. UPS already had notification that I was bringing it in, and took care of packing it. By the time I got home 10 minutes later, I had an email from Apple confirming UPS had the iPad ready for shipping.

That was a Friday morning. By noon Wednesday, I had the replacement in hand. Not bad considering two of those days were weekends, so Apple did not receive my old one until Monday morning. Very happy with how this was handled.
