Some days I wake up and put my watch on and my fitness rings do not count. I restart my watch, and it works. Is there any way to prevent this happening?

There is only one current Apple Watch backup, which is also part of the iPhone backup.

In Settings/iPhone Storage/Watch, I can find only my current Apple Watch Ultra 2 backup and a backup of my old series 5 from the time before I handed the watch down to a family member.
Since the backup you have saved 3 years ago must have been created with an older watchOS (probably watchOS 9), erasing and setting it up as a new device will rule out software issues.
Also make sure to update your paired iPhone to the latest iso version before that.
Did you already erase the watch and set it up as a new device after that, without using the latest backup?
I used a backup from before the problem started
When I set up my watch, I could use backups from up to when I first used my watch 3 years ago, because I have reset it/ unpaired and repaired it many times
I wouldnt use any backup, you only lose your saved faces
