I have to big screens on my desk (one through for the work PC through an HP docking station) and my Mac. I would like to switch to a MacBook Pro and connect it through the docking station. Is that possible ?

You'll need a Thunderbolt dock to drive more than one display from a Mac. If you try with that dock, both displays will show the same thing.
Also be careful with Thunderbolt docks that let you connect more than two monitors at a time. There are some Dell Thunderbolt docks and some HP Thunderbolt docks that are like this.
Those docks may drive some of their outputs in ways that Macs do not support (DisplayPort MST) – and you might need to limit yourself to specific combinations of outputs for the Mac to see two monitors and for you to be able to use extended desktop mode.
