One of my contacts, their name, photo and phone number have disappeard from my phone and macbook, but remain on ipad. Their imessage no longer has their name, just phone number. This has only happened to one of my contacts. Could the contact owner have done something to cause this change?

No one who doesn't have physical access to your devices has any way to remove or alter a contact on your devices. Why this changed, we can't really know, but just add the contact back and call it an oddity.
Unlike some Android devices, contacts are neither stored locally on an iPhone nor in the SIM. They are synced to an email account that you have Google, iCloud, AOL, Exchange, Outlook, Yahoo, or any Other
If you have a corporate email account added through a profile on your device, please check with your organization's system administrator.
thank you for the reply. What I meant is could the contact owner have done something on their end so that their info no longer appears in my contacts? It doesn't make any sense why his contact and his contact only, would be missing.

I understood what you were asking. I had hoped my response made it clear that no, no one can change anything about your contacts on their end. But I also see you got it sorted, so that's great!
Figured out the issue -- some of my contact lists didn't sync with the latest update -- all good!
